Chiles Rellenos de Queso (Cheese-Stuffed Poblano Peppers)
Why this recipe works
- Tender and crisp: Roasting softens the poblanos, while the whipped egg batter fries into a light, puffed coating.
- Simple savoury depth: The tomato sauce gains flavour from softened onion, garlic and cumin without overpowering the peppers and cheese.
- Recognisable technique: Charring, peeling, stuffing and batter-frying the poblanos gives chiles rellenos their classic shape, texture and richness.

Ingredient notes
- Choose sturdy poblanos: Look for broad, firm peppers with thick walls; they are easier to peel, stuff and fry without tearing.
- Use a good melting cheese: Queso Oaxaca gives the classic stretch, while mozzarella is the closest practical substitute if Oaxaca is unavailable.
- Use ripe tomatoes: Ripe tomatoes cook down into a fuller, naturally sweeter sauce; if they are very mild, adjust seasoning at the end.
Texture tips
- Keep the batter airy: Whisk the egg whites to stiff peaks, then fold in the yolks gently so the coating stays light rather than dense.
- Fry at a steady temperature: Keeping the oil around 175°C (350°F) helps the batter puff and brown before it absorbs too much oil.
- Serve promptly: The coating is best soon after frying, especially once it meets the tomato sauce.
Make-ahead tips
- Make the sauce ahead: The tomato sauce can be cooked in advance and reheated gently before serving.
- Prepare the peppers in stages: The poblanos can be roasted, peeled and stuffed ahead, then battered and fried just before eating.
- Re-crisp leftovers: Reheat the peppers in a 200°C (390°F) oven until hot and the coating has firmed up again.
Serving ideas
- Serve with rice or beans: Mexican-style rice, refried beans or black beans make the dish feel complete without competing with the sauce.
- Add a fresh finish: A little chopped coriander, sliced onion or a squeeze of lime can brighten the richness of the fried batter and cheese.
- Keep the sauce separate for crispness: Spoon the sauce onto the plate first, then set the fried chile on top so the coating stays crisp for longer.

Peppers and batter
Instructions
- Make the tomato sauce: heat the sunflower oil in a saucepan over medium heat. Add the onion with a pinch of the fine sea salt and cook for 6 to 8 minutes until softened and lightly golden, then add the garlic and cook for 30 seconds. Add the tomatoes, ground cumin, black pepper and the remaining fine sea salt, bring to a simmer, then cook for 12 to 15 minutes until saucy.
- While the sauce simmers, prepare the poblanos: char the peppers directly over a gas flame or in a very hot dry frying pan, turning until blistered all over. Transfer to a bowl, cover, and leave for 10 minutes to steam. Rub off the skins, then cut a slit down one side and remove the seeds, keeping the peppers as intact as possible.
- Stuff each pepper with the queso Oaxaca, packing it in so the pepper closes neatly. Put the plain flour on a plate and lightly dust the outside of each pepper, shaking off the excess. Set aside while you make the batter.
- Separate the eggs, putting whites in a mixing bowl and yolks in a small bowl. Whisk the whites to stiff peaks, then whisk in the yolks one at a time to make a light batter; season with the fine sea salt and black pepper. Keep the batter airy by folding gently rather than beating.
- Heat the sunflower oil in a large frying pan to 175°C (350°F). Dip each stuffed pepper into the egg batter to coat, then carefully lower into the hot oil and fry for 2 to 3 minutes per side until puffed and golden. Fry in batches so the oil temperature stays steady, then lift out with tongs and drain briefly.
- Taste the tomato sauce and adjust seasoning with a little more fine sea salt or black pepper if needed. Spoon the sauce onto plates and set the chiles rellenos on top. Serve straight away while the batter is crisp and the cheese is molten.
Recipe notes
Tips
- For the neatest stuffing, choose poblanos with broad shoulders and thick walls so they hold their shape after peeling.
- Keep the egg batter light by whisking the whites to stiff peaks and folding in the yolks gently; overmixing makes a dense coating.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark or an equivalent safety standard.
Substitutions
- Replace Queso Oaxaca with Mozzarella for a similar melt and stretch.
- Replace Sunflower oil with Vegetable oil for frying and the sauce.
Storage
- Refrigerate up to 2 days
- Cool leftovers, then refrigerate in a sealed container. Reheat the sauce in a saucepan over low heat until piping hot; reheat the peppers in a 200°C (390°F) oven for 10 to 12 minutes to re-crisp the coating.
