Tacu Tacu (Peruvian Rice and Bean Cakes)
Why this recipe works
- Crisp-edged crust: Pressing the rice and beans into a thick cake gives the mixture enough contact with the pan to brown deeply while staying soft inside.
- Aromatic seasoning: Softened red onion, garlic, cumin and ají amarillo paste build a savoury base that seasons the mild rice and beans throughout.
- Good for leftovers: Cooked rice and beans bind naturally, making this a practical way to turn simple staples into a filling dish that reheats well.

Adjust the heat
- For a milder version: Use less ají amarillo paste and let the cumin, onion and garlic provide warmth without making the chilli flavour dominant.
- For more heat: Add extra ají amarillo paste gradually before mixing in the rice and beans so the heat is evenly distributed.
- To balance the chilli: Serve with something fresh and acidic, such as a sharp salad or salsa, to cut through the starchiness and mellow the heat.
Texture tips
- Dry the rice briefly: Letting the drained rice steam-dry for a few minutes helps the cake fry rather than soften in the pan.
- Let the crust form: After pressing the mixture into the pan, avoid moving it too soon; it will release more cleanly once the underside is properly golden.
- Press firmly: A firm press helps the mashed beans and rice bind together, giving cleaner wedges after frying.
Authenticity notes
- A leftover-friendly Peruvian staple: Tacu tacu is closely associated with Peruvian home cooking, where cooked rice and beans are turned into a crisp, hearty pan-fried cake.
- Ají amarillo character: Ají amarillo paste brings fruity chilli warmth and a recognisably Peruvian seasoning profile.
- Bean variations: Different beans can be used; darker beans give a deeper colour and flavour, while cannellini beans keep the cake paler and milder.
Make-ahead tips
- Prepare the mixture ahead: The rice and bean mixture can be made in advance and chilled, then shaped and pan-fried when ready to serve.
- Freeze cooked portions: Cool completely, then freeze pieces between layers so they can be reheated without sticking together.
- Recrisp before serving: Reheat in a lightly oiled frying pan, or bake at 200°C (390°F) until hot throughout and crisp at the edges.

Ingredients
Instructions
- Cook the rice in a saucepan of salted boiling water for 10 to 12 minutes until tender. Drain well and spread on a plate for a few minutes so it dries slightly.
- Drain and rinse the cannellini beans, then tip them into a bowl and mash roughly with a wooden spoon so some beans stay whole. Finely chop the red onion and crush the garlic.
- Heat 1 tbsp sunflower oil in a large frying pan over medium heat. Cook the onion with a pinch of the salt for 5 minutes until softened, then stir in the garlic for 30 seconds.
- Stir in the ají amarillo paste, ground cumin and black pepper and cook for 1 minute until fragrant. Add the mashed beans and cooked rice, then mix and press with the spoon until the mixture holds together; taste and season with the remaining salt if needed.
- Spread the mixture out in the pan and press firmly into a thick round, about 2 cm deep. Cook for 6 to 8 minutes until the underside is deeply golden and crisp at the edges.
- Slide the cake onto a plate, invert another plate on top, then flip it back into the pan. Add the remaining sunflower oil around the edges and cook for 6 to 8 minutes until golden and hot through.
- Cut into wedges and serve straight away while the edges are crisp. If you are cooking in batches, keep finished pieces warm in a low oven.
Recipe notes
Tips
- Drying the drained rice for a few minutes helps the cake crisp rather than steam in the pan.
- Press the mixture firmly and avoid moving it too soon; it will release cleanly once a good crust has formed.
- For a milder heat, reduce the ají amarillo paste to 1 tbsp and add a pinch more ground cumin for warmth.
Substitutions
- Replace canned cannellini beans with canned black beans for a more traditional colour and a deeper flavour.
- Replace sunflower oil with olive oil for a fruitier finish.
- Replace red onion with yellow onion for a sweeter, softer base.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a lightly oiled frying pan over medium heat for 3 to 4 minutes per side until piping hot, or bake at 200°C (390°F) for 10 to 12 minutes; freeze between layers and reheat from frozen in the oven until hot throughout.
