Moroccan Wedding Chicken Tagine with Preserved Lemons and Olives

Moroccan wedding-style chicken tagine is a celebratory braise where tender bone-in chicken is served in a glossy onion-rich sauce sharpened with preserved lemon and green olives. Saffron, ginger and turmeric give the dish its warm colour and fragrant depth, while the lemon peel brings the distinctive salty brightness associated with classic Moroccan chicken tagines. The slow, gentle simmer keeps the meat succulent and lets the sauce reduce into something savoury enough to scoop up with couscous or warm bread. It is generous, aromatic and well suited to both relaxed family meals and more festive serving.

Why this recipe works

  • Layered savoury flavour: Onions, garlic, saffron, ginger and turmeric build a fragrant base before the chicken slowly braises.
  • Bright, salty balance: Preserved lemon and green olives cut through the richness of the chicken and give the sauce its recognisable Moroccan character.
  • Gentle braising: Low, covered cooking keeps the chicken tender while the final uncovered simmer concentrates the sauce.

Ingredient notes

  • Use the preserved lemon peel: Discard the flesh and slice the peel finely; it gives the tagine its clean citrus flavour without making the sauce harsh.
  • Season after the olives and lemon: Both ingredients can be quite salty, so taste near the end before adding more salt.
  • Bone-in chicken suits the braise: Thighs or legs hold their texture well during slow cooking and give the sauce more depth.

Timing notes

  • Mostly hands-off cooking: The active work is mainly slicing, browning the onions and finishing the sauce; most of the time is gentle simmering.
  • Serve once the sauce is glossy: The tagine is ready when the chicken is tender and the liquid has reduced to a lightly thickened gravy.

Authenticity notes

  • Tagine-style braising: A clay tagine is traditional, but a Dutch oven gives a similar slow, moist cooking environment on the hob.
  • Serve with bread or couscous: The sauce is central to the dish, so pair it with something that can absorb the saffron, lemon and olive gravy.

Make-ahead tips

  • Good made ahead: The flavours settle well after chilling, making this a strong option for cooking a day in advance.
  • Reheat gently: Warm on the hob over low heat with a splash of stock if the sauce has thickened too much.
  • Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge and reheat until piping hot.

  1. Halve and thinly slice the onion, and thinly slice the garlic. Put the saffron in a small bowl with 2 tbsp of the chicken stock and leave to steep while you start cooking.
  2. Set a tagine base or Dutch oven over medium heat and warm the olive oil. Add the onion with a pinch of salt and cook for 8 to 10 minutes until softened and lightly golden, stirring regularly.
  3. Stir in the garlic, ground ginger and ground turmeric and cook for 1 minute until fragrant. Nestle in the chicken thighs, turning them to coat in the spiced onions.
  4. Pour in the remaining chicken stock and the saffron soaking liquid, then bring to a gentle simmer. Cover and cook on low for 45 minutes, turning the chicken once or twice, until the meat is tender and starting to pull from the bone.
  5. Rinse the preserved lemon briefly, then remove and discard the flesh and thinly slice the peel. Add the preserved lemon peel and the olives, then simmer uncovered for 15 to 20 minutes until the sauce is glossy and lightly thickened.
  6. Finely chop the coriander and parsley, then stir most of them through the tagine. Taste and adjust seasoning if needed, then scatter over the remaining herbs to serve.

Serving suggestions

This recipe pairs well with:

Couscous Bread

Tips

  • Keep the heat low enough that the tagine barely simmers; a gentle bubble keeps the chicken tender and stops the sauce reducing too quickly.
  • If your preserved lemons are very salty, rinse them well and use a lighter hand with salt until you have tasted the finished sauce.

Substitutions

  • Replace fresh coriander with extra fresh parsley for a milder herbal finish.
  • Replace chicken thighs with chicken legs for a similar braise time and rich flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently on the hob with a splash of chicken stock until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
