Lomo Saltado Wrap (Peruvian Beef, Onion and Tomato Wrap)
Why this recipe works
- Savoury-tangy finish: Soy sauce and red wine vinegar create the glossy, umami-rich coating associated with lomo saltado.
- Crisp and juicy contrast: Thin potato chips add crunch against tender beef, softened onion and briefly cooked tomato.
- Fast high-heat cooking: Thin beef strips and quick stir-frying keep the recipe within a lunch-friendly cooking time.

Authenticity notes
- A wrap-style adaptation: Traditional lomo saltado is usually served with chips and rice; using tortillas turns those same core flavours into a handheld meal.
- Chifa influence: The soy sauce reflects the Chinese-Peruvian influence that defines classic lomo saltado.
Texture tips
- Brown the beef, don’t steam it: Use a very hot pan and keep the beef in a single layer where possible so it sears quickly.
- Keep the chips crisp: Add the chips just before rolling the wrap, especially if packing it for later.
- Cook tomatoes briefly: Add the tomato at the end so it warms through while still holding its shape and juiciness.
Make-ahead tips
- Store before assembling: Keep the beef stir-fry, tortillas and chips separate so the wrap does not soften in the fridge.
- Reheat in a hot pan: Warm the beef mixture quickly in a hot pan until piping hot, then assemble with fresh tortillas and chips.

Ingredients
Instructions
- Scrub the potato and cut it into very thin chips, about 2 to 3 mm thick. Heat 2 tbsp of the sunflower oil in a wok or large frying pan over medium-high heat, then fry the chips in a single layer in batches for 3 to 5 minutes, turning, until golden and crisp. Lift out to a plate and set aside.
- Slice the beef into thin strips, then slice the red onion into wedges and cut the tomatoes into chunky wedges. Roughly chop the coriander. In a small bowl, mix the soy sauce and red wine vinegar.
- Return the pan to high heat and add the remaining 1 tbsp sunflower oil. Sear the beef for 60 to 90 seconds, tossing, until browned but still a little pink in places. Add the onion and stir-fry for 1 to 2 minutes until it starts to soften but keeps its bite.
- Add the tomatoes and cook for 30 to 60 seconds, just until warmed through. Pour in the soy and vinegar mixture and toss for 30 seconds so everything is glossy and well coated. Take off the heat and fold through most of the coriander, reserving a little for finishing.
- Warm the flour tortillas in a dry pan for 20 to 30 seconds per side, just until pliable. Spoon the beef stir-fry down the centre of each tortilla and top with a generous handful of the chips. Sprinkle over the reserved coriander, then roll up and serve straight away.
Recipe notes
Tips
- For the best sear, make sure the pan is properly hot before adding the beef and cook it in a single layer so it browns rather than steams.
- Keep the tomatoes chunky and cook them briefly so they stay juicy and hold their shape in the wrap.
- If you are packing these for lunch, keep the chips separate and add them just before eating so they stay crisp.
Substitutions
- Replace Beef sirloin steak with Beef flank steak for a slightly chewier, more traditional stir-fry texture.
- Replace Red wine vinegar with White wine vinegar for a cleaner, lighter tang.
- Replace Fresh coriander with Fresh flat-leaf parsley if you prefer a milder herb finish.
Storage
- Refrigerate up to 2 days
- Store the beef stir-fry in an airtight container in the fridge for up to 2 days. Reheat in a hot pan for 2 to 3 minutes until piping hot, then assemble with freshly warmed Flour tortillas and crisp chips.
