Chicken Do Pyaza (Chicken Curry with Onions)
Why this recipe works
- Layered onion flavour: Slowly browning the sliced onions creates a sweet, savoury base before the spices, tomatoes and chicken are added.
- Balanced richness: Tomatoes and yoghurt cut through the richness of the ghee and round out the natural sweetness of the onions.
- Built for rice or bread: The thick masala coats the chicken well, making it easy to scoop with naan or serve over steamed rice.

Adjust the heat
- For a milder curry: Deseed the green chilli or use a smaller amount, keeping the ginger, garlic and spices for flavour.
- For more heat: Use a hotter green chilli or add extra chilli with the aromatics so the heat infuses the sauce.
- Keep the heat rounded: Stir the yoghurt in over low heat so it softens the chilli warmth without dulling the spice.
Authenticity notes
- Two-stage onions: Do pyaza is recognised for using onions in two ways: deeply cooked into the masala and added later in larger pieces for texture.
- Common variations: The same approach is often used with chicken, lamb or mutton; the onion technique is what defines the dish.
Common mistakes
- Scorching the onions: Aim for deep golden onions, not burnt ones. Lower the heat if they catch before they have softened properly.
- Adding yoghurt too quickly: Reduce the heat and stir the yoghurt in gradually to keep the sauce smooth.
- Boiling the curry too hard: Keep the simmer gentle once the chicken is added so the masala reduces without sticking or toughening the meat.
Make-ahead tips
- Good made ahead: The curry keeps well, and the spice and onion flavours settle nicely after a night in the fridge.
- Reheat gently: Warm over low heat, stirring often, and loosen the sauce with a small splash of water if needed.
- Freezer-friendly: Freeze after cooling completely, then defrost in the fridge before reheating until piping hot.

Ingredients
Instructions
- Halve and thinly slice 2 of the onions, then cut the remaining onion into chunky wedges. Finely grate the ginger, crush the garlic, and finely chop the chilli. Roughly chop the tomatoes and finely chop the coriander.
- Heat the sunflower oil and ghee in a dutch oven over medium heat. Add the sliced onions with 1 tsp of the salt and cook for 12 to 15 minutes, stirring often, until deep golden and sweet. If they start catching, lower the heat slightly and keep stirring.
- Stir in the ginger, garlic and chilli and cook for 1 minute until fragrant. Add the turmeric, cumin and ground coriander and cook for 30 seconds, stirring constantly. Tip in the tomatoes and cook for 6 to 8 minutes until broken down and glossy.
- Add the chicken and the remaining 1 tsp salt, stirring to coat in the masala. Bring to a gentle simmer, then cover and cook for 15 minutes, stirring once or twice, until the chicken is tender and cooked through. If the sauce looks dry, add a small splash of water and keep it at a steady simmer.
- Stir in the onion wedges and cook, uncovered, for 6 to 8 minutes until just tender but still holding their shape. Lower the heat and stir in the yoghurt a spoonful at a time so it stays smooth. Finish with the garam masala and most of the coriander, then taste and adjust with a pinch more salt if needed.
- Serve hot, scattered with the remaining coriander. Let the curry stand for 2 to 3 minutes off the heat before serving so the sauce settles.

Serving suggestions
This recipe pairs well with:
Tips
- For the best do pyaza flavour, take your time browning the sliced onions until properly golden; this is where the sweetness and depth come from.
- Keep the simmer gentle once the chicken goes in, so the sauce reduces without catching on the base of the pan.
- If serving vulnerable groups, use pasteurised yogurt and ensure the chicken is cooked until piping hot throughout.
Substitutions
- Replace ghee with sunflower oil for a lighter finish.
- Replace chicken thighs with chicken breast, but reduce the covered simmer to 10 to 12 minutes to keep it juicy.
- Replace yogurt with crème fraîche for a slightly richer, less tangy finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, stirring often, until piping hot; add a splash of water if the sauce has thickened. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
