Sopes de Frijoles y Chorizo (Masa Sopes with Beans and Chorizo)
Why this recipe works
- Classic masa structure: Pinching a rim into each masa base creates the recognisable sope shape and keeps the beans, chorizo and salsa neatly contained.
- Good contrast: Tender masa, creamy beans, crisp-edged chorizo, cool lettuce and crumbly queso fresco give each bite a clear mix of textures.
- Savoury depth: Rendered chorizo fat enriches the beans, while salsa verde and lime cut through the richness with acidity and brightness.

Texture tips
- Assemble just before serving: Keep the fried masa bases separate from the beans and toppings until the last minute so the rims stay defined and the base does not soften too much.
- Fry briefly after griddling: The short fry gives the sopes a lightly golden surface without making them hard or brittle.
Adjust the heat
- For less heat: Choose a mild chorizo and use a gentler salsa, adding lime for brightness instead of extra chilli heat.
- For more heat: Use a hotter salsa verde or add a chilli-based salsa at the table so each serving can be adjusted individually.
Make-ahead tips
- Store components separately: Keep cooked sope bases, beans, chorizo and fresh toppings in separate containers, then reheat and assemble just before serving.
- Freeze the bases: Cooked sope bases freeze well when wrapped tightly. Reheat from frozen in a 180°C (355°F) oven until hot, then crisp briefly if needed.
Authenticity notes
- Antojito-style serving: Sopes are part of Mexico’s broad family of masa-based antojitos, usually served with beans, salsa, cheese and a savoury topping.
- Flexible toppings: Chorizo and beans are a hearty version, but the same masa base can carry other cooked meats, vegetables, salsas or cheeses.

Instructions
- In a mixing bowl, combine the masa harina and fine sea salt. Stir in the warm water to form a soft dough, then knead for 1 minute until smooth. Cover and rest for 10 minutes so the masa hydrates.
- Meanwhile, shred the romaine lettuce and cut the lime into wedges. Crumble the queso fresco into a bowl and set aside with the salsa verde. If your chorizo is in casings, slit and remove them.
- Heat a large frying pan over medium heat and cook the chorizo, breaking it up, for 6 to 8 minutes until browned and crisp in places. Transfer to a plate, leaving the rendered fat in the pan. Keep warm on a low heat if needed.
- Divide the dough into 9 balls and flatten each into a thick disc about 7 to 8 cm wide. Pinch up the edges to form a shallow rim so the toppings sit neatly. Keep the shaped bases covered as you work so they do not dry out.
- Heat a cast-iron frying pan over medium-high heat and cook the sopes in batches for 2 to 3 minutes per side until lightly browned and set. Transfer to a plate as you go. They should feel firm at the edges but still tender in the centre.
- Add the lard to the pan used for the chorizo and warm over low heat, then stir in the refried beans until hot and spreadable, 3 to 4 minutes. If they seem stiff, loosen with a splash of water. Taste and adjust with a little more salt if needed.
- Pour the vegetable oil into a clean frying pan to a depth of about 1 cm and heat over medium-high until shimmering. Fry the griddled sopes for 30 to 45 seconds per side until lightly golden and tender, then drain briefly. Work in batches so the oil temperature stays steady.
- Spread each sope with warm refried beans, then top with crisp chorizo. Finish with shredded romaine lettuce, salsa verde, and crumbled queso fresco. Serve straight away with lime wedges for squeezing over.
Recipe notes
Tips
- Keep the masa covered while shaping; if it cracks, knead in a little more warm water until pliable.
- For the best texture, fry the sopes briefly after griddling; they should be lightly golden, not deeply browned.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chorizo is cooked until piping hot throughout.
Substitutions
- Replace lard with vegetable oil for cooking the beans if you prefer.
- Replace salsa verde with salsa for a different heat level and flavour.
Storage
- Refrigerate up to 2 days
- Store the cooked sope bases separately from toppings in an airtight container. Reheat the bases in a dry frying pan over medium heat until hot, then crisp briefly in a little vegetable oil; reheat the beans gently until piping hot and assemble just before serving. Freeze cooked bases well wrapped for up to 2 months and reheat from frozen in a 180°C (355°F) oven until hot.
