Poha (Flattened Rice with Mustard Seeds and Peanuts)
Why this recipe works
- Tempered aromatics: Mustard seeds, curry leaves, chilli and turmeric bloom in hot oil, giving the poha its distinctive savoury aroma.
- Soft with crunch: Fluffy softened poha is balanced by toasted peanuts, so the dish feels light but still has bite.
- Fresh finish: Lemon and coriander lift the onion, turmeric and peanuts, keeping the dish bright rather than heavy.
- Fast everyday cooking: The flattened rice softens quickly, so most of the work is simply tempering, sautéing and steaming in the pan.

Texture tips
- Keep the rinse brief: Rinse the poha just enough to soften it, then let it drain well. Soaking makes it heavy and clumpy.
- Steam gently: Once the poha is in the pan, use a low heat and stir carefully so the grains stay separate and light.
Adjust the heat
- For less heat: Use less green chilli or remove the seeds before cooking.
- For more heat: Add extra green chilli to the tempering, letting it sizzle briefly with the curry leaves.
Ingredient notes
- Choose the right poha: Medium or thick poha is best here, as very thin flakes can soften too quickly and turn mushy.
- Fresh curry leaves matter: Fresh curry leaves give the most aromatic result; dried leaves are milder and less fragrant.
- Finish with citrus: Add the lemon off the heat so its freshness stays sharp and clean.
Make-ahead tips
- Prepare the aromatics ahead: The onion, chilli, coriander and lemon can be prepared in advance so the dish comes together quickly.
- Reheat gently: Warm leftovers in a frying pan over a low heat with a splash of water, stirring lightly until piping hot.
- Best served fresh: Poha is at its fluffiest straight from the pan, although leftovers can be refrigerated and reheated.

Instructions
- Put the flattened rice in a colander and rinse briefly under cold water, gently turning it with your hand. Leave it to drain for 5 minutes so it softens but does not turn soggy.
- Heat the sunflower oil in a large frying pan over a medium heat. Add the peanuts and cook for 2 to 3 minutes, stirring, until a shade darker and fragrant; tip them into a bowl and set aside.
- Return the pan to a medium heat and add the mustard seeds. Once they start to pop, add the curry leaves and the green chilli and cook for 30 to 60 seconds until aromatic.
- Add the onion and cook for 5 to 7 minutes, stirring, until softened and lightly golden at the edges. Stir in the turmeric for 30 seconds so it blooms in the oil.
- Add the drained poha and the toasted peanuts, then stir gently to coat everything evenly. Sprinkle in 3 tbsp water, cover, and steam on a low heat for 3 to 4 minutes until the poha is hot and fluffy; stir once halfway through.
- Take the pan off the heat and squeeze over the lemon. Finish with the coriander and serve straight away.
Recipe notes
Tips
- Keep the rinse brief and let the poha drain well; if it sits in water it will turn heavy rather than fluffy.
- If the mustard seeds are not popping, the oil is not hot enough; give it another 30 seconds before adding the curry leaves.
- If serving to anyone who is pregnant, elderly, or immunocompromised, wash the coriander carefully and serve the poha piping hot.
Substitutions
- Replace sunflower oil with olive oil for a fruitier finish.
- Replace peanuts with cashew nuts for a richer, sweeter crunch.
- Replace lemon with lime for a sharper citrus note.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a frying pan over a low heat with a splash of water, stirring gently until piping hot; add a fresh squeeze of lemon after reheating.
