Bignè alla Crema Pasticcera (Italian Choux Buns with Custard)
Why this recipe works
- Classic choux method: Cooking the flour paste on the hob before adding the eggs helps the buns rise into light, hollow shells.
- Crisp shell, silky filling: The baked choux stays airy and delicate while the chilled crema pasticcera gives each bun a smooth, creamy centre.
- Easy to stage ahead: The custard and unfilled shells can be prepared separately, then combined just before serving for the best texture.

Timing notes
- Chill the custard fully: The crema pasticcera should be completely cold and thick before piping, otherwise it can soften the pastry too quickly.
- Fill close to serving: Bignè are at their best soon after filling, while the shells still have some crispness and the custard is cold.
Texture tips
- Bake until deeply golden: Pale choux buns tend to collapse or soften; a deep golden colour signals that the structure has set properly.
- Let steam escape: Piercing the buns and returning them to a lower oven helps dry the centres so they stay lighter once filled.
Common mistakes
- Opening the oven too early: Avoid opening the door during the first bake, as the sudden drop in heat can stop the choux from rising properly.
- Rushing the custard: Whisk constantly and temper the eggs gradually so the crema pasticcera thickens smoothly rather than scrambling.
Ingredient notes
- Milk gives a tender shell: Using milk in the choux adds a gentle richness and encourages good browning in the oven.
- Use starch thoughtfully: Cornflour helps stabilise the custard; potato starch can work similarly, but the custard should still be cooked until glossy and thick.

Instructions
- Start the crema pasticcera. Warm the milk in a saucepan over medium heat until steaming and just starting to bubble at the edges, then take off the heat.
- In a mixing bowl, whisk together the sugar, cornflour and salt, then whisk in the eggs until smooth and pale. Slowly whisk in the hot milk a little at a time to temper the eggs.
- Pour the mixture back into the saucepan and cook over medium heat, whisking constantly, until thick and glossy and the whisk leaves clear trails. Cook for 1 minute more, then take off the heat and whisk in the vanilla extract.
- Tip the custard into a clean bowl and press a piece of baking paper directly onto the surface to prevent a skin forming. Cool to room temperature, then chill until fully cold and thick.
- Heat the oven to 200°C (390°F) and set a baking tray in the middle of the oven to preheat. Fit a piping bag with a plain nozzle, or snip a 1.5 cm opening if you do not have one.
- Make the choux pastry. Put the milk, butter and salt in a saucepan and bring to a brisk simmer, stirring until the butter melts.
- Take the pan off the heat and add the flour all at once. Beat vigorously with a wooden spoon until a smooth paste forms, then return to medium heat and cook, stirring, for 2 to 3 minutes until a thin film forms on the base of the pan and the dough looks slightly glossy.
- Tip the dough into a mixing bowl and leave for 5 minutes so it is warm rather than hot. Beat in the eggs one at a time until the dough is smooth, shiny and falls from the spoon in a thick V shape.
- Spoon the choux into the piping bag and pipe 12 mounds onto the hot baking tray, spacing them well apart. Bake for 25 to 30 minutes until well risen, deep golden and crisp, without opening the oven door.
- Turn the oven down to 170°C (340°F), quickly pierce the side of each bun with the tip of a knife to let steam escape, then return to the oven for 8 minutes to dry out. Cool completely on the tray.
- Whisk the chilled crema pasticcera until smooth, then spoon it into a piping bag. Split the buns or pipe into the steam hole, filling each until it feels heavy but still light, then serve straight away.
Recipe notes
Tips
- For the lightest buns, do not open the oven during the first bake; wait until they are deeply golden and feel crisp to the touch.
- If the custard thickens too quickly, take the pan off the heat and whisk hard, then return to a lower heat to finish cooking without scrambling.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe for raw or lightly cooked dishes and ensure the custard is cooked until thick and steaming hot.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Cornflour with potato starch for a similarly silky, stable custard.
Storage
- Refrigerate up to 2 days
- Store filled buns in an airtight container in the fridge and eat within 2 days; the shells will soften over time. For best texture, store unfilled buns at room temperature and fill just before serving.
