Pecan Pie with Golden Syrup Custard in Shortcrust Pastry
Why this recipe works
- Crisp pastry, soft filling: Blind baking the shortcrust case helps it stay crisp against the rich syrup custard.
- Deep caramel flavour: Golden syrup and light brown sugar give the filling warm caramel notes without overpowering the pecans.
- Sets cleanly as it cools: Cooling the pie fully allows the custard to firm up, making it easier to slice neatly.

Timing notes
- Chill the pastry properly: The dough is chilled before rolling and again once in the tin, which helps reduce shrinkage during baking.
- Cool before slicing: Let the pie cool completely after baking so the custard can set and hold its shape.
- Best served at room temperature: Room temperature gives the filling a softer texture and lets the nutty, buttery flavours come through clearly.
Texture tips
- Keep the base crisp: Bake the pastry case until the base looks dry and lightly golden before adding the filling.
- Watch the centre: The filling should have set edges and a slight wobble in the centre; baking until fully firm can make it dense.
- Protect the rim if needed: If the pastry edge darkens too quickly, cover it loosely with foil for the final part of baking.
Ingredient notes
- Golden syrup: Golden syrup gives the custard its glossy texture and mellow caramel sweetness.
- Pecans matter: Use fresh-tasting pecans, as stale nuts can make the finished pie taste flat or bitter.
- For a deeper flavour: Dark brown sugar can replace light brown sugar if you prefer a more treacly filling.
Make-ahead tips
- Bake ahead: The pie can be baked in advance and kept covered in the fridge, then brought to room temperature before serving.
- Warm slices gently: For a softer filling, warm individual slices in a 160°C (320°F) oven until just heated through.
- Freezer-friendly: Freeze the baked pie well wrapped, then thaw overnight in the fridge before serving.

Instructions
- Make the pastry: put the flour and salt in a bowl, then rub in the cold butter until it looks like fine crumbs. Beat the egg with the cold water, add to the bowl, and bring together into a smooth dough without overworking. Flatten into a disc and chill for 30 minutes.
- On a lightly floured surface, roll the pastry to about 3 mm thick and line a 23 cm tart tin, pressing it neatly into the corners. Chill the lined tin for 15 minutes while you heat the oven to 190°C (375°F).
- Blind bake the pastry case for 15 minutes, then remove the weights and bake for 8 to 10 minutes more until the base looks dry and lightly golden. Reduce the oven to 175°C (345°F).
- Make the filling: gently warm the golden syrup, brown sugar, butter and salt in a saucepan over low heat, stirring just until the butter melts and the sugar loosens. Take off the heat and leave for 5 minutes so it is warm, not hot. Stir in the vanilla.
- In a bowl, lightly beat the eggs, then whisk in the warm syrup mixture until smooth. Scatter the pecans over the pastry case, then pour over the custard so the nuts are well distributed. Bake for 35 to 45 minutes until the edges are set and puffed, and the centre has a slight wobble when the tin is gently nudged.
- Cool the pie in the tin for at least 1 hour, then remove from the tin and cool completely before slicing so the filling sets cleanly. Serve at room temperature.

Tips
- If the pastry starts to crack as you line the tin, patch it with small offcuts and press the seams together; shortcrust is forgiving once baked.
- If the crust is browning too quickly during the final bake, loosely cover the rim with foil for the last 10 to 15 minutes.
- Food safety: this pie contains eggs; ensure the filling is baked until the edges are set and the centre is just set, and avoid serving to vulnerable groups if you prefer not to use eggs that are thoroughly cooked.
Substitutions
- Replace Vanilla extract with the same amount of Vanilla bean paste for a more pronounced vanilla flavour.
- Replace Light brown sugar with Dark brown sugar for a deeper, more treacly flavour.
Storage
- Refrigerate up to 4 days
- Keep covered in the fridge for up to 4 days. For the best texture, bring to room temperature before serving, or warm slices in a 160°C (320°F) oven for 8 to 10 minutes. Freeze well wrapped for up to 2 months and thaw overnight in the fridge.
