Chebakia Platter (Sesame and Honey Cookies)
Why this recipe works
- Recognisable technique: The dough is rolled thinly, folded into layered shapes, fried and dipped in honey, creating the distinctive chebakia form and finish.
- Fragrant depth: Toasted sesame, orange blossom water, cinnamon, anise and saffron give the pastry a floral, nutty and gently spiced flavour.
- Crisp and syrupy: Frying gives the folded dough crisp edges, while the warm honey glaze adds a glossy, slightly chewy coating.

Authenticity notes
- Shaped by hand: The folded flower shape is central to chebakia; keeping the pieces evenly sized helps them fry and absorb honey consistently.
- Sesame and orange blossom: Toasted sesame and orange blossom water are key to the pastry’s familiar Moroccan flavour, bringing nuttiness and perfume to the dough and glaze.
- Made for sharing: Chebakia are typically served piled on a platter, where their sticky honey coating and sesame finish make them easy to share.
Timing notes
- Rest the dough: The short rest makes the dough easier to roll thinly and helps prevent cracking during shaping.
- Let them cool: Chebakia are best served once fully cooled, when the honey coating has settled and the texture has firmed.
- Cool before storing: Allow the pastries to cool completely before sealing them in a container so trapped steam does not soften them too much.
Common mistakes
- Watch the oil temperature: Keep the oil close to 170°C (340°F); too cool and the pastries can turn greasy, too hot and the outside may darken before the centre cooks.
- Fry in batches: Overcrowding drops the oil temperature and makes the shaped dough harder to turn without damaging the folds.
- Keep the honey gentle: Warm the honey only enough to make it fluid. If it gets too hot, it can darken and take on a bitter edge.
Make-ahead tips
- Shape in stages: Work with one portion of dough at a time and keep the rest covered, so the surface stays supple while you shape the batch.
- Freeze after frying and coating: Once cooled, the finished chebakia can be frozen in a sealed container and defrosted at room temperature.
- Refresh gently: If the pastries soften after freezing, refresh them briefly in a low oven, then cool before serving.

Instructions
- Toast 120 g of the sesame seeds in a dry frying pan over a medium heat for 3 to 5 minutes, stirring, until fragrant and lightly golden. Tip onto a plate to cool completely, then crush to a coarse powder using a mortar and pestle. Keep the remaining 30 g sesame seeds aside for finishing.
- In a mixing bowl, combine the plain flour, crushed toasted sesame, ground cinnamon, anise seeds, fine sea salt and saffron. Melt the unsalted butter until just liquid and let it cool slightly, then rub it into the flour mixture until evenly coated. Make a well in the centre.
- Beat the egg with 30 ml orange blossom water, the apple cider vinegar and most of the water, then pour into the well. Mix to a firm dough, adding the remaining water a little at a time only if needed, until it comes together and feels supple rather than sticky. Knead for 8 to 10 minutes until smooth and elastic.
- Cover the dough and let it rest at room temperature for 30 minutes so it rolls cleanly. Meanwhile, warm the honey in a saucepan over a low heat until fluid, then stir in the remaining 15 ml orange blossom water and keep it barely warm. Set up a tray for the finished cookies.
- Divide the dough into 4 pieces and keep the pieces you are not using covered. Roll one piece thinly on a lightly floured surface, about 2 mm thick, then cut into rectangles about 6 x 4 cm. Make 4 parallel slits down the centre of each rectangle, leaving the ends intact.
- To shape, thread your fingers through the slits, pinch the ends together, then turn the dough inside out to form a flower-like shape with layered folds. Repeat with the remaining dough, keeping shaped pieces covered as you work so they do not dry out. Aim for evenly sized pieces so they fry at the same rate.
- Heat the sunflower oil in a large pot to 170°C (340°F). Fry the chebakia in batches for 4 to 6 minutes, turning gently, until deep golden and cooked through. Lift out with a slotted spoon and let excess oil drip back into the pot for a few seconds.
- While still hot, dip each fried cookie into the warm honey, turning to coat well, then lift out and let the excess drip off. Sprinkle with the reserved sesame seeds while the honey is tacky. Leave to cool completely before serving on a sharing platter.
Recipe notes
Tips
- Keep the honey warm over a very low heat so it stays fluid; if it gets too hot it can darken and taste bitter.
- If you are new to shaping, practise with one piece of dough first and keep the rest covered so it does not dry out and crack when rolled.
- Hot oil can be dangerous: keep children away from the hob, do not overcrowd the pot, and use a thermometer to maintain a steady frying temperature.
Substitutions
- Replace Orange Blossom Water with rose water for a different floral note.
- Replace Apple cider vinegar with white vinegar for the same tenderising effect.
Storage
- Refrigerate up to 5 days
- Store in an airtight container at cool room temperature for up to 5 days. Freeze in a sealed container for up to 2 months; defrost at room temperature and refresh briefly in a low oven if you like.
