Mole de Olla (Beef and Guajillo Soup with Vegetables)
Why this recipe works
- Broth-first depth: Simmering bone-in beef with onion and garlic creates a savoury base before the chilli-tomato purée is added.
- Clean chilli flavour: The strained guajillo and tomato mixture brings earthy warmth, colour and body without making the soup heavy.
- Vegetables stay distinct: Corn, chayote and green beans are added in stages so they soften without collapsing into the broth.

Authenticity notes
- Brothy, not thick: Mole de olla is a soup-stew with a light chilli broth, rather than the thick, sauce-like mole many readers may know.
- Vegetables can vary: The vegetable mix often changes by household or season; the important point is to add firmer vegetables before quicker-cooking ones.
Timing notes
- Mostly hands-off: Most of the time is spent gently simmering the beef, so the vegetables and guajillo-tomato purée can be prepared while the broth cooks.
- Serve when the vegetables are just tender: The soup is at its best when the chayote holds its shape and the green beans still have colour and bite.
Adjust the heat
- For a milder broth: Use smoked paprika in place of the guajillo chilli powder for a softer, smokier version with very little heat.
- For more heat: Add a little hotter chilli powder alongside the guajillo, tasting gradually so the broth stays balanced.
Make-ahead tips
- Cook the broth ahead: The beef and broth can be cooked in advance, then reheated before adding the vegetables so they keep a better texture.
- Freezes well: Cool the soup quickly and freeze in sealed portions; defrost in the fridge and reheat gently until piping hot.
- Refresh the broth: If the soup thickens after chilling, add a splash of water while reheating to bring it back to a brothy consistency.

Ingredients
Instructions
- Put the beef shank in a stockpot and cover with 2.5 l water. Add half the onion and 2 garlic cloves, bring to a gentle simmer, then skim any foam from the surface. Simmer partially covered for 75 to 90 minutes, until the beef is tender.
- Meanwhile, roughly chop the tomatoes and the remaining onion, and peel the remaining garlic. Blend the tomatoes, remaining onion, remaining garlic, guajillo chili powder, and 250 ml water until smooth. Strain into a bowl, pressing well to extract the purée.
- Peel the chayote, remove the stone, and cut into bite-size pieces. Trim the green beans and cut into short lengths. Cut each corn cob into 3 to 4 pieces.
- When the beef is tender, stir the strained guajillo-tomato mixture into the pot and add the fine sea salt. Simmer for 10 minutes to cook out the raw tomato flavour. Taste and adjust with a little more salt if needed.
- Add the chayote and corn, then simmer for 10 minutes. Add the green beans and simmer for a further 8 to 10 minutes, until all the vegetables are tender but still holding their shape. If the broth reduces too much, add a splash of water to keep it brothy.
- Finely chop the fresh coriander. Cut the limes into wedges. Ladle the soup into bowls, scatter over coriander, and serve with lime for squeezing at the table.
Recipe notes
Tips
- Keep the simmer gentle rather than boiling hard, so the beef stays tender and the broth remains clear.
- For a cleaner broth, skim the surface a couple of times during the first 20 minutes of simmering.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the soup is simmered until the beef is fully tender and piping hot throughout.
Substitutions
- Replace Guajillo chili powder with smoked paprika for a milder, smokier broth.
- Replace Fresh corn on the cob with Frozen corn on the cob, adding it for the final 10 minutes so it does not overcook.
- Replace Fresh coriander with Fresh flat-leaf parsley for a different herbal finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan until piping hot; add a splash of water if the broth has thickened. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
