Gratin Dauphinois with Roast Chicken

Few roast dinners feel as assured as gratin dauphinois served with a properly roasted chicken. The gratin is a French potato bake, traditionally made from thinly sliced potatoes cooked slowly in cream with garlic, seasoning and a hint of nutmeg until the layers turn tender beneath a burnished top. Paired here with lemon and thyme roast chicken, it gives the meal both richness and lift: crisp, savoury skin and juicy meat alongside creamy potatoes that slice cleanly after resting. It is generous enough for Sunday lunch, but still practical for a considered family dinner.

Why this recipe works

  • Creamy potatoes, crisp chicken: The soft, rich gratin balances the roast chicken’s golden skin and juicy meat.
  • Simple layered flavour: Garlic, nutmeg, thyme and lemon add depth without overwhelming the potatoes or chicken.
  • Classic gratin method: Thin potato slices and warmed cream help the gratin cook evenly and set neatly before serving.

Timing notes

  • Rest the chicken: Letting the chicken rest while the gratin bakes keeps the meat juicier and makes carving easier.
  • Stand the gratin before slicing: A short stand after baking helps the cream settle so the potatoes cut into cleaner portions.

Texture tips

  • Slice the potatoes evenly: Very thin, even slices cook at the same pace and help the gratin hold together.
  • Protect the top if needed: If the surface colours too quickly, cover it loosely with foil, then uncover near the end to finish browning.

Ingredient notes

  • Choose waxy, creamy potatoes: Yukon Gold potatoes work well because they become tender without collapsing completely in the cream.
  • Use fresh herbs where possible: Fresh thyme gives the roast chicken a cleaner, brighter aroma than dried thyme.

Make-ahead tips

  • Prepare the chicken for crisper skin: Leaving the chicken uncovered in the fridge before roasting helps dry the skin for better colour and crispness.
  • Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, covering the gratin loosely if it begins to over-brown.

  1. Heat the oven to 200°C (390°F). Pat the chicken dry, then rub all over with 30 g of the butter, 2 tsp salt and 1 tsp pepper.
  2. Halve the lemon and put it in the chicken cavity with 4 sprigs of thyme. Roast in a roasting pan for 60 to 70 minutes, until the skin is deeply golden and the thickest part of the thigh reaches 75°C (165°F).
  3. While the chicken roasts, peel the potatoes and slice them very thinly (about 2 mm) using a mandoline or a sharp knife. Peel and lightly crush the garlic cloves.
  4. Rub a baking dish with the crushed garlic, then grease with 20 g butter. In a saucepan, warm the double cream and whole milk with the nutmeg, 1.5 tsp salt and 0.5 tsp pepper until steaming but not boiling.
  5. Layer the potatoes in the dish, pouring over enough warm cream mixture to just coat each layer as you go. Finish with the remaining cream mixture, pressing the potatoes down so they are mostly submerged.
  6. When the chicken comes out, reduce the oven to 180°C (355°F) and leave the chicken to rest. Bake the gratin for 45 to 55 minutes, until the top is deeply golden and a knife slides through the centre with little resistance.
  7. Scatter the remaining thyme over the gratin and leave it to stand for 10 minutes so it slices neatly. Carve the chicken and serve with thick slices of gratin.

Recipe notes

Tips

  • For extra-crisp skin, keep the chicken uncovered in the fridge for 4 to 12 hours before roasting, then season and roast as directed.
  • If the gratin browns too quickly, loosely cover the dish with foil for the last 15 to 20 minutes, then uncover to finish colouring.
  • Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken reaches 75°C (165°F) at the thickest part of the thigh.

Substitutions

  • Replace Fresh thyme with Fresh rosemary for a more resinous, piney flavour.
  • Replace Lemon with Orange for a sweeter citrus note with the roast chicken.
  • Replace Double cream with Whipping cream for a slightly lighter gratin.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in airtight containers. Reheat chicken and gratin in a 180°C (355°F) oven until piping hot; cover the gratin loosely if it starts to over-brown.
