Paris-Brest (Choux Pastry Ring with Praline Cream)

A Paris-Brest is one of the most recognisable French pâtisserie desserts: a wheel-shaped ring of choux pastry, baked until crisp and hollow, then split and filled with a rich praline cream. The pleasure comes from the combination of textures — airy pastry, toasted sliced almonds and a silky almond-praline filling with the structure of custard and buttercream. It is an advanced bake, but the method is practical when approached in stages: dry the choux well, cool the custard fully and pipe the cream only once it holds its shape. Serve soon after filling for the best crispness, with a short chill to help achieve clean slices.

Why this recipe works

  • Classic choux method: Cooking the flour paste before adding eggs gives the pastry structure, helping the ring rise and hold its shape in the oven.
  • Crisp, dry shell: The two-stage bake and brief drying time in the switched-off oven help prevent the choux from collapsing or turning soft too quickly.
  • Silky praline filling: Beating cooled custard gradually into softened butter creates a smooth mousseline-style cream with enough body for piping.

Timing notes

  • Cool fully before filling: The choux ring needs to be completely cool before slicing and piping, otherwise the cream can soften and lose definition.
  • Best shortly after assembly: Once filled, the pastry will gradually soften in the fridge, so assemble close to serving when a crisp shell matters most.
  • Take the chill off: Let the finished Paris-Brest stand briefly at room temperature before serving so the praline cream tastes fuller and smoother.

Texture tips

  • Bake to a deep golden colour: Pale choux is often underbaked inside; a deeper colour usually means the shell is drier, sturdier and less likely to sink.
  • Add the custard gradually: Beat the custard into the butter a spoonful at a time to keep the praline cream smooth and evenly emulsified.
  • Chill before slicing: A short chill after assembly firms the cream enough for neater portions without making the dessert too heavy.

Ingredient notes

  • Praline paste matters: Almond praline paste gives the filling its signature toasted nut flavour; choose a smooth paste for the most refined texture.
  • Use eggs gradually: Choux paste can vary in how much egg it absorbs, so add the final egg slowly and stop when the paste falls in a thick V shape.
  • Use softened butter: Butter that is soft but not melted blends more easily with the custard and helps the cream stay light rather than greasy.

Make-ahead tips

  • Make the components ahead: The custard base can be prepared in advance and chilled, then brought back to a workable temperature before beating with butter.
  • Keep pastry and cream separate: For the best texture, store the baked choux ring and praline cream separately, then fill closer to serving.
  • Assemble on the day: Paris-Brest is at its best the day it is filled, while the shell still has contrast against the rich cream.

  1. Heat the oven to 200°C (390°F). Line a baking tray, then draw a 20 cm circle as a guide and turn the paper over so the pencil does not touch the pastry.
  2. Make the choux: put the milk, butter, salt and sugar in a saucepan and bring just to the boil. Tip in the flour all at once and beat hard over a low heat until the mixture forms a smooth ball and a thin film forms on the base of the pan.
  3. Scrape the paste into a mixing bowl and leave for 5 minutes so it cools slightly. Beat in the eggs one at a time, mixing well after each, until the paste is glossy and falls from the spoon in a thick V shape; you may not need the last egg in full, so add it gradually.
  4. Spoon the choux into a piping bag and pipe a ring on the circle, then pipe a second ring directly on top and a third ring tucked against the inside to build height. Sprinkle generously with the sliced almonds, pressing lightly so they adhere.
  5. Bake for 25 minutes, then reduce the oven to 180°C (355°F) and bake for 10 to 15 minutes more until deep golden and crisp. Turn the oven off, crack the door open and leave the ring inside for 10 minutes to dry, then cool completely on a rack.
  6. While the choux bakes, make the custard base: warm the milk with the vanilla in a saucepan until steaming. In a bowl whisk the eggs, sugar, cornflour and salt until smooth, then slowly whisk in the hot milk.
  7. Return the mixture to the saucepan and cook over a medium heat, whisking constantly, until thick and bubbling for 30 seconds. Scrape into a bowl, press a piece of baking paper directly on the surface to prevent a skin forming, and cool to room temperature.
  8. Beat the butter until very smooth, then beat in the cooled custard a spoonful at a time until fully combined and silky. Beat in the almond praline paste until evenly blended, then chill until firm enough to pipe.
  9. To assemble, slice the choux ring horizontally with a serrated knife. Pipe the praline cream generously over the base, then set the top back on and chill for 30 minutes before serving for the cleanest slices.

Recipe notes

Tips

  • For the best rise, do not open the oven door during the first 25 minutes of baking, and make sure the choux is baked until properly crisp before cooling.
  • If the choux paste feels too stiff after adding the eggs, beat in a little more egg until it drops from the spoon in a thick V shape.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe for raw or lightly cooked preparations and ensure the custard is cooked until bubbling.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Sliced almonds with flaked almonds for a slightly larger, crunchier topping.

Storage

  • Refrigerate up to 2 days
  • Store assembled Paris-Brest in the fridge in a covered container for up to 2 days. For the best texture, let it sit at room temperature for 10 to 15 minutes before serving; the choux will soften over time.
