Quiche aux Poireaux (French Leek Quiche)
Why this recipe works
- Soft, creamy filling: Eggs, milk and crème fraîche create a custard that sets gently around the leeks without becoming dense.
- Subtle savoury depth: Dijon mustard, nutmeg and black pepper add warmth and complexity while keeping the leeks as the main flavour.
- Better pastry structure: Chilling and briefly baking the pastry case before filling helps it hold its shape and resist sogginess.

Timing notes
- Chill the lined tin: A short chill before baking helps the pastry relax, reducing shrinkage and giving a neater edge.
- Look for a slight wobble: The centre should be just set with a gentle wobble when it comes out of the oven; it will firm as it rests.
- Rest before slicing: Letting the quiche stand for 10 minutes makes the custard easier to cut cleanly.
Ingredient notes
- Wash leeks thoroughly: Slice the leeks first, then rinse them well in cold water so any grit trapped between the layers can fall away.
- Cook leeks gently: Softening the leeks over medium-low heat brings out their sweetness; browning can make the filling taste sharper.
- Changing the dairy: Greek yoghurt makes the custard tangier and lighter, while double cream gives a richer, fuller texture.
Common mistakes
- Browning the leeks: Avoid high heat when cooking the leeks; they should soften and turn sweet, not fry or colour.
- Overbaking the custard: Bake only until the centre is just set. Too long in the oven can make the filling firm rather than tender.
- Skipping the pastry bake: Baking the pastry case before adding the filling helps protect the base from the wet custard.
Make-ahead tips
- Bake ahead: The quiche can be baked in advance, cooled completely and refrigerated well covered for up to 3 days.
- Freeze in slices: Freeze cooled slices wrapped well, then defrost before reheating for the best texture.
- Reheat in the oven: Warm slices on a baking tray at 180°C (355°F) until piping hot so the pastry stays more defined than it would in a microwave.

Instructions
- Heat the oven to 190°C (375°F). Put the flour and salt in a bowl, rub in the cold butter until it looks like fine crumbs, then stir in the milk to bring it together into a dough.
- Roll the dough out and line a 23 cm cake tin, pressing it neatly into the corners. Chill in the fridge for 15 minutes to help prevent shrinkage.
- Prick the base all over with a fork, then bake for 15 minutes until the edges look set and just starting to colour. Remove from the oven and reduce the temperature to 180°C (355°F).
- Meanwhile, trim and wash the leeks well, then slice them. Melt the butter in a frying pan over a medium-low heat, add the leeks and a pinch of the salt, and cook for 10 to 12 minutes until soft and sweet but not browned.
- Spread the Dijon mustard over the warm pastry base. Spoon in the softened leeks and level them out.
- Whisk the eggs, milk and crème fraiche until smooth, then whisk in the nutmeg, pepper and remaining salt. Pour the custard over the leeks.
- Bake for 30 to 35 minutes until the quiche is lightly golden and the centre is just set with a slight wobble. Rest for 10 minutes before slicing so it firms up cleanly.
Recipe notes
Tips
- Leeks can hold grit between the layers, so slice them first, then swish in a bowl of cold water and lift out, leaving any sand behind.
- For the best texture, cook the leeks gently until very soft; if they brown, the filling can taste harsh.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the quiche is baked until the centre is fully set and piping hot.
Substitutions
- Replace Crème fraiche with Greek yogurt for a slightly tangier, lighter custard.
- Replace Whole milk with Double cream for a richer, more luxurious filling.
- Replace Dijon mustard with Whole-grain mustard for a milder heat and a little texture.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate well covered. Reheat slices on a baking tray at 180°C (355°F) for 10 to 15 minutes until piping hot; freeze slices wrapped well for up to 2 months and reheat from defrosted.
