Butter Chicken (Murgh Makhani)

Butter chicken, or murgh makhani, is one of North India’s most recognisable curries: tender pieces of marinated chicken served in a smooth tomato, butter and cream sauce. The yoghurt marinade brings gentle tang and helps the spices cling to the meat, while garam masala, cumin, coriander, ginger and garlic give the gravy its warm, rounded depth. Kashmiri chilli adds colour and mild heat rather than aggressive spice. Finished over low heat so the sauce stays silky, it is rich without being heavy, and best served with steamed rice, naan or chapati for scooping up the creamy gravy.

Why this recipe works

  • Layered spice base: The yoghurt marinade seasons the chicken before it is simmered in a tomato sauce enriched with butter, ginger, garlic and warm spices.
  • Silky sauce: Blending the tomato base before adding cream creates the smooth, restaurant-style texture associated with butter chicken.
  • Good for planning ahead: The curry stores and reheats well when warmed gently, making it practical for leftovers or batch cooking.

Adjust the heat

  • For a milder curry: Reduce the Kashmiri chilli and keep the cream generous enough to soften the spice level.
  • For more heat: Add extra Kashmiri chilli or a hotter chilli powder to the marinade, adjusting gradually so the sauce stays balanced.
  • Keep the warmth rounded: Butter, cream and tomatoes should soften the chilli rather than hide it, so taste after simmering before making final adjustments.

Timing notes

  • Marinating matters: The chill time helps the yoghurt and spices cling to the chicken and season it before browning.
  • Mostly hands-off time: Although the total time is around 100 minutes, the active cooking is much shorter; the rest is mainly marinating and gentle simmering.
  • Serve hot and silky: Once the cream is added, warm the curry gently and serve while the sauce is loose and glossy.

Ingredient notes

  • Use chicken thighs for tenderness: Boneless, skinless thighs stay juicy through browning and simmering, which suits the rich sauce well.
  • Kashmiri chilli gives colour and warmth: Kashmiri chilli is valued for its red colour and moderate heat; a hotter chilli powder will make the curry sharper.
  • Cream affects the finish: Double cream gives the sauce its rounded, silky texture; lighter cream can work but needs especially gentle heat.

Common mistakes

  • Do not fully cook the chicken when browning: The chicken only needs light colour in the pan, as it finishes cooking gently in the sauce.
  • Avoid boiling after adding cream: Keep the heat low once the cream goes in, as hard boiling can make the sauce split.
  • Adjust a thickened sauce gently: If the curry thickens too much during reheating, loosen it with a small splash of water and warm slowly.

  1. In a mixing bowl, stir together the yogurt, half the garlic, half the ginger, garam masala, ground cumin, ground coriander, ground Kashmiri chili, and 1 tsp of the fine sea salt. Add the chicken thighs and turn to coat well. Cover and chill for 45 minutes.
  2. Heat the sunflower oil in a large frying pan over medium-high heat. Add the chicken (letting excess marinade drip back into the bowl) and cook for 6 to 8 minutes, turning, until lightly browned; it does not need to be cooked through. Transfer the chicken to a plate.
  3. Reduce the heat to medium and add the unsalted butter to the same pan. Stir in the remaining garlic and ginger and cook for 30 to 60 seconds until fragrant. Add the canned chopped tomatoes and the remaining 1 tsp fine sea salt, then simmer for 10 minutes until slightly thickened.
  4. Blend the sauce until smooth, then return it to the pan over low heat. Add the chicken and any resting juices, and simmer gently for 12 to 15 minutes until the chicken is tender and cooked through. Keep the heat low so the sauce stays silky.
  5. Stir in the double cream and warm for 2 to 3 minutes without boiling. Taste and adjust with a pinch more fine sea salt if needed. Serve hot.

steamed rice naan chapati

Tips

  • For the smoothest sauce, blend while still warm and take care not to splash; a blender jug should never be filled more than halfway.
  • Keep the heat low after adding the double cream, as boiling can cause the sauce to split.
  • If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace Chicken thighs with Chicken breast boneless skinless for a leaner curry; reduce the final simmer to 8 to 10 minutes to keep it juicy.
  • Replace Yogurt with Greek yogurt for a thicker marinade that clings well to the chicken.
  • Replace Double cream with Cooking cream for a lighter finish, keeping the heat very low.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat until piping hot, adding a splash of water if the sauce has thickened. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
