Latin Prawn Tacos Bowl

A taco bowl takes the familiar flavours of tacos and serves them as a generous, fork-friendly grain bowl, with rice replacing the tortilla as the base. Here, cumin- and smoked paprika-spiced prawns bring quick-cooked warmth, while black beans make the bowl more satisfying without weighing it down. Coriander-lime rice keeps the dish bright, and the fresh tomato and red onion salsa adds juiciness and acidity against the creamy avocado. It is the kind of flexible lunch or light dinner that feels complete in one bowl, with lime wedges at the table so each serving can be sharpened to taste.

Why this recipe works

  • Fresh balance: Lime, tomato salsa and coriander cut through the richness of the prawns and avocado.
  • Smoky warmth: Cumin, smoked paprika and garlic give the prawns depth without needing a long marinade.
  • Bowl-friendly assembly: Rice, beans, prawns and cold toppings stay distinct, so each bite has warmth, freshness and texture.

Texture tips

  • Keep the prawns tender: Cook the prawns only until pink and just opaque; they can turn rubbery if left in the pan too long.
  • Keep the bowl fresh: Add the salsa and avocado just before serving so the rice stays fluffy rather than wet.

Ingredient notes

  • Choose firm avocado: A ripe but firm avocado slices neatly and holds its shape against the warm rice and beans.
  • Use fresh lime: Fresh lime zest and juice give the rice and prawns a brighter finish than bottled juice.

Make-ahead tips

  • Store in separate containers: Keep the rice, beans, prawns and salsa apart, then add avocado fresh when assembling.
  • Reheat gently: Warm the rice and beans until piping hot, and reheat the prawns briefly so they do not overcook.

  1. Rinse the rice under cold water until the water runs clearer. Tip into a saucepan with 300 ml water and 0.75 tsp of the fine sea salt, bring to the boil, then cover and cook on low for 12 minutes. Remove from the heat and leave, covered, for 10 minutes.
  2. Meanwhile, finely chop the tomato and red onion, and roughly chop most of the fresh coriander, reserving a little for serving. In a mixing bowl, combine the tomato, red onion, a squeeze of lime juice, a pinch of the remaining salt, and the chopped coriander. Set aside so the flavours mingle.
  3. Drain and rinse the black beans in a colander. Tip them into the saucepan you used for the rice with a splash of water and warm gently over low heat, stirring occasionally, until hot. Season with a pinch of salt if needed.
  4. Finely grate or crush the garlic. In a bowl, toss the prawns with the garlic, ground cumin, smoked paprika, 1 tbsp of the olive oil, and the remaining salt. Leave for a couple of minutes while you heat the pan.
  5. Heat a large frying pan over medium-high heat and add the remaining 1 tbsp olive oil. Add the prawns in a single layer and cook for 2 to 3 minutes, turning once, until pink and just cooked through. Squeeze over a little lime juice right at the end.
  6. Fluff the rice with a fork, then stir through the zest of 1 lime and a squeeze of juice. Divide the rice between two bowls and spoon over the warm black beans and prawns. Slice the avocado, add it to the bowls, and finish with the tomato salsa, reserved coriander, and lime wedges for squeezing over.

Recipe notes

Tips

  • For the best texture, pat the prawns dry before seasoning so they sear rather than steam.
  • If you are cooking for anyone vulnerable, make sure the prawns are piping hot all the way through before serving.

Substitutions

  • Replace long-grain white rice with jasmine rice for a more fragrant base.
  • Replace smoked paprika with ground paprika for a milder, less smoky flavour.
  • Replace fresh coriander with fresh flat-leaf parsley if you prefer a less assertive herb.

Storage

  • Refrigerate up to 2 days
  • Store rice, beans, prawns, and salsa separately in airtight containers. Reheat the rice and beans in the microwave until piping hot, and warm the prawns briefly in a frying pan; add avocado and salsa cold just before serving.
