Italian Rum Cake (Sponge with Pastry Cream and Whipped Cream)
Why this recipe works
- Layered flavour: Rum syrup, vanilla pastry cream, whipped cream and dark chocolate create a balanced mix of sweetness, creaminess and gentle bitterness.
- Soft, creamy layers: The sponge absorbs the syrup while the chilled pastry cream sets firmly enough to hold neat slices.
- Improves with chilling: Resting in the fridge gives the syrup time to settle into the cake and helps the filling and cream firm up before serving.

Timing notes
- Cool completely before slicing: The sponge needs to be fully cold before it is cut into layers, otherwise it can tear or compress.
- Chill before serving: At least one hour in the fridge helps the pastry cream set and makes the finished cake easier to slice.
- Take the chill off slightly: Cold slices are neatest, but a short rest at room temperature before eating softens the cream and improves the flavour.
Texture tips
- Keep the sponge light: Fold the flour in gently and avoid deflating the whipped eggs; this is what gives the cake its airy structure.
- Smooth the pastry cream: Whisk the chilled pastry cream briefly before spreading so it becomes glossy and even between the sponge layers.
Ingredient notes
- Choose a good dark chocolate: A darker baking chocolate gives the topping a cleaner bittersweet edge against the sweet cream.
- Alcohol remains in the syrup: The rum is stirred in after the syrup comes off the heat, so it is not cooked off before the cake is assembled.
Dietary alternatives
- Alcohol-free version: Replace the rum with water for a simple alcohol-free syrup, keeping the cake soft without the boozy flavour.

Instructions
- Heat the oven to 170°C (340°F). Grease a 20 cm cake pan with the butter and dust lightly with a little of the plain flour, tapping out the excess.
- Sift the remaining plain flour with the cornflour into a bowl. In a stand mixer, whisk 5 eggs with 150 g caster sugar for 6 to 8 minutes until very pale, thick, and the ribbon holds for a few seconds.
- Fold the sifted flours into the egg mixture in 2 additions, keeping as much air as possible. Scrape into the prepared pan and bake for 25 to 30 minutes until golden and the sponge springs back when lightly pressed.
- Cool the sponge in the pan for 10 minutes, then turn out onto a cooling rack to cool completely. Keep the oven off and leave the pan to hand for assembling later.
- Make the rum syrup: bring 120 g caster sugar and the water to a simmer, stirring just until the sugar dissolves. Take off the heat, stir in the rum, and leave to cool.
- Make the pastry cream: warm the milk with the vanilla bean paste in a saucepan until steaming but not boiling. In a bowl, whisk 2 eggs with 90 g caster sugar and the cornflour until smooth.
- Pour the hot milk onto the egg mixture, whisking constantly, then return everything to the pan. Cook over medium heat, whisking, for 2 to 4 minutes until thick and bubbling; cook for 1 minute more to remove any starchy taste.
- Take off the heat and whisk in the unsalted butter until glossy. Tip into a shallow dish, press a piece of baking paper directly onto the surface to prevent a skin forming, and chill until cold and set.
- Whip the double cream with the icing sugar to soft peaks. Keep chilled while you assemble so it stays light and spreadable.
- Slice the cooled sponge horizontally into 3 even layers. Set the base layer on a serving plate and brush generously with the cooled rum syrup, letting it soak in for a minute.
- Whisk the chilled pastry cream briefly until smooth, then spread half over the soaked base. Add the second sponge layer, brush with more syrup, and spread over the remaining pastry cream; top with the final sponge and brush with the last of the syrup.
- Cover the top and sides with the whipped cream. Finely shave the dark baking chocolate over the cake, then chill for at least 1 hour so the layers set before slicing.
Recipe notes
Tips
- For neat layers, chill the sponge for 20 minutes before slicing, and use a long serrated knife with gentle sawing motions.
- When cooking the pastry cream, keep whisking into the corners of the pan so it thickens evenly and does not catch.
- If serving to children or anyone avoiding alcohol, note that the rum is not cooked off once added to the syrup.
Substitutions
- Replace Rum with water for an alcohol-free syrup, keeping the same amount.
- Replace Vanilla bean paste with Vanilla extract for a similar vanilla flavour.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge and slice cold for the cleanest layers. For best texture, let slices sit at room temperature for 10 minutes before serving.
